A Hiking Honeymoon

As I write this, it’s been only four days since my husband and I returned from our honeymoon. For two weeks we explored the natural beauty of Banff, Yoho, and Jasper National Parks in the Canadian Rockies. Every morning we laced up our hiking boots, donned packs and set out on the steep trails. With awesome wonder we admired the snow-capped jagged peaks, tumbling waterfalls, and dazzling turquoise lakes and streams. The scenery was, quite simply, breathtaking.

For the majority of our trip, we pitched our tent in established campgrounds with flush toilets and showers. While camping in the backcountry provides a unique experience, I wasn’t ready to tent in a place where bears outnumber humans. Instead, for two nights of our trip we made a reservation with the Alpine Club of Canada (ACC) to stay in the Sydney Vallance (Fryatt) Hut. On Our Menu: July 25 - 31

The hot, heavy air is still upon us. This week I'll be spending a lot of time cooking out on the grill. I'm also trying out three recipes from the Super Natural Every Day cookbook. If the food tastes half as good as it looks in the photos, we're in for a treat. On Sunday we're going to the Union Thresheree which is a big antique tractor show close to our home. The tractor parade is always fun to see and we like watching the guys work in the old sawmill. Also, Sunday is Christian's birthday so I'll be making a special treat for him - Snickers Ice Cream Cake!

Monday: When it's really hot out, we tend to not get very hungry. Also, I was craving veggies after eating camp food for 2 weeks so a salad really hit the spot.

On Our Menu: July 18 - 24

After being in the cool, dry mountain air for 2 weeks we had a bit of a shock coming home to hot, sticky Wisconsin. With heat indexes well over 100 degrees, I refuse to turn on the stove. We'll be sticking to fresh veggies, crock pot meals and grilling out. The one thing I always crave after being on camping trips is fresh veggies and fruit so we'll be getting our fair share of those this week. Oh, and ice cream. Let's not forget the ice cream!

The Honeymoon is over - literally.

Christian and I just got home from our honeymoon - 2 weeks of hiking in Banff, Yoho and Jasper National Parks in the Canadian Rockies. The scenery was amazing! Snow-capped jagged peaks. Turquoise and teal mountain lakes and rivers. Lush, mossy, and dense sub-alpine forests. Wolf tracks on the muddy trail. Wildflowers swaying in the breeze. Heaven on Earth. I'm already missing it.
