On Our Menu: September 19 - 25

Even though I don't have a menu to review from last week, I want to mention one of the new recipes I tried: Dairy-Free Spinach Stuffed Shells. I love stuffed pasta shells but only make them about once a year because they are so unhealthy. Not these babies! I didn't feel like stuffing shells so I made a 3-layer lasagna instead. After we finished eating I asked Christian what he thought of the lasagna. He said it was "great!" and that's when I informed him that it was tofu. I'm serious, you cannot taste the difference!
