On Our Menu: August 6 - 12

It's that time of year when the folks who grow zucchini are looking for new and interesting ways to cook it. We have one very prolific zucchini bush so many of our meals as of late incorporate zucchini in some way, shape or form. I always have my eyes open for new zuc recipes to try and this one is a new favorite of mine: 

Zucchini Ribbon Pasta with Light Creamy Lemon-Basil Sauce 
Oh so good! The dish is about 1/2 regular fettuccine noodles and 1/2 zucchini "noodles". What a great way to get some extra veggies in your diet! I loved this dish and it will be making it onto our table during zucchini season for many years to come.

we always just ended up with Zucchini fritters! but that's just what my mom did to get all that zucchini we used to grow down out throat :)
