On Our Menu: January 28 - February 3

Last Sunday I had planned on making Lemon-Thyme Turkey in the crockpot but I forgot to get the turkey out of the freezer. Oops! So, the turkey is finally defrosting and now we're planning on having it this Friday. I'm sure I'm not the only one who has ever done something like that.

Salmon with Toasted Israeli Couscous
This recipe was nice because everything cooked in one pot but the flavor just wasn't that great. The couscous was bland and I can think of better ways to use up some of the salmon from our fishing trip. I wouldn't recommend trying this.

A lot of times I don't try Martha Stewart recipes because they are too fussy but this soup came together very quickly and it's loaded with veggies. Knitting: Twined Knit Fingerless Mitts
Right now I'm taking a class at my local yarn shop, The Copper Llama, to learn twined knitting. Twined knitting is an heirloom technique from Sweden that creates a double-layered piece. You knit with 2 different strands of yarn and for each stitch, you are picking up the opposite stitch than what you last knit from underneath that strand which creates a twist. Follow that? Probably not but that's okay. Because you have to pick up a different strand for each stitch the going is slow but the results are beautiful. Yarn: Cascade 220 in Colorways 9471 and 9465B

On Our Menu: January 21 - 27

How was your weekend? Christian and I just hung around home and got some much-needed chores done. We finally took down the Christmas decorations. Sad. Sad because we still had them up and sad that the house looks so empty now.

1 Million Vegetables Lentil Stew
Like the title says, this stew is loaded with veggies. While the flavor was good, the recipe made a lot and by the third day of leftovers, I didn't want to look at another bowl of this stew. Also, something in the stew didn't agree with my stomach and I was left with an upset tummy each time that I ate it.

Mushroom Stroganoff
This healthy take on traditional stroganoff is so creamy and hearty that you won't even know that it's missing meat. 

Broccoli Cheese Soup

Door County Winter Weekend Getaway

On Monday I posted this picture and asked if you could guess where we went over the weekend:


We were in Door County - the "thumb" of Wisconsin!


This was supposed to be a snowshoeing trip but there wasn't a hint of snow in sight. Oh well. We made the best of it and just went hiking instead. On Saturday we hiked at Newport State Park on the Lake Michigan side of the peninsula. Door County is a very popular tourist destination but in winter it is virtually deserted - just the way we like it! 


Saturday night we stayed at the Edgewater Resort in Ephraim which is on the Green Bay side of the peninsula. Thanks to an awesome internet deal, we got a king suite for half price! We were welcomed with a little gift basket of Door County goodies. Our place had a full kitchen, cozy fireplace, and a whirlpool that was perfect for warming up after a day out in the cold. We brought along stuff to make our own pizza and just stayed in for dinner. We laughed about what was in the fridge: beer …

Knitting: The Hat from Hell
This hat was supposed to be my husband's Christmas present 2 years ago! He wanted a hat that the wind wouldn't blow through. The first hat was too bulky and he looked like a Russian in the depths of a Siberian winter. I then found a hat that is knit like a giant sausage and one end is stuffed inside of the other making it a double-layered hat. Again, he looked like a Russian not to mention my gauge was WAY off so the hat would have fit Bigfoot. Many, many variations later, I think we almost have a hat that we both like. I'm going to tuck the bottom end up inside the hat so it will be double-layered over his ears. Gosh, I hope this works! Yarn: Bernat Mosaic

I haven't posted a menu in a few weeks but that doesn't mean I haven't been cooking! 

Here are a few recipes I've recently tried. (click the title for the recipe link)

Chile-Lime Veggie Noodles
A new favorite for sure! I don't have a wok so I used a large skillet. Instead of trying to make an omelette and then cutting it apart, I just scrambled the eggs. The flavor of this dish is great - rivals any take-out menu and doesn't leave you parched from too much sodium! 

Chipotle Black Bean Chili
A nice, hearty vegetarian chili. I skipped the tortilla strip monkey-business. I also didn't have any chipotle peppers in adobo so I used chipotle powder and that worked just fine. I saved half of the recipe to make:

Stacked Black Bean Enchilada Pie
(Made with half of the Chipotle Black Bean Chili) What an easy recipe! Just add some corn and cheese to the chili, layer the mix between some tortillas and bake!
